Warm Up Pear Cobbler 


This is a great winter or anytime dish, really, but one that I like and is a little lighter on the sugar than most.

2 medium pears, peeled and sliced into 1/2 inch slices
2 ounces tart dried cherries
2 tablespoons packed light brown sugar

3 tablespoons flour
3 tablespoons fresh lemon juice
1/8 teaspoon ground cinnamon
1/4 cup flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons granulated sugar
1/3 cup chilled unsalted butter, cut into pieces.

1/3 -1/4 cup hot water (plus 3-4 tablespoons if needed)
pinch of nutmeg
pinch of salt

Method: Preheat oven to 375°

Toss the first six ingredients together in a bowl and transfer  to a small baking dish. Wisk the remaining flour,baking powder, salt and sugar in a bowl. Cut in the butter until it becomes a coarse meal. Gradually add in the water until a soft wet dough forms, a few lumps are O.K. Drop the dough by spoon over the fruit in the baking dish. Sprinkle some additional granulated sugar and bake until the filling is bubbling and the top is golden brown and cooked through, this takes about 30-35 minutes. Let cool and serve.

Serves: 2 (this can be doubled)
